West African Soup

| Ingredients | 2 tbsps butter 1/2 cup onion, chopped 1 tbsp curry powder 1 cup leeks, chopped 1 clove garlic, finely minced 1/2 banana, diced 1 1/2 cup apple, peeled, diced |
1 cup tomatoes, peeled and chopped 1 cup potato, peeled and cubed salt and pepper to taste red pepper sauce to taste 3 1/2 cup chicken or vegetable stock 1 cup heavy cream Chopped peanuts, for garnish |
| Preparation |
Melt butter in a large pot and add onion. Sauté until translucent, and add curry, stirring to coat onion. Add remaining fruits and vegetables. Stir well. Add salt, pepper, red pepper sauce and stock, and simmer for 20 minutes. Pour into food processor or blender and process until smooth. Chill thoroughly. Just before serving, stir cream. Garnish with chopped peanuts.
